Chocolate Chip Muffins
300g self raising flour
1 teaspoon baking powder
50g baking butter
80g caster sugar
150g chocolate chips
1 teaspoon vanilla extract
preheat the oven to 200 c. place 12 paper muffin cases in a muffin tin.
Mix the flour and baking powder together in a big bowl. Rub in the butter until it looks like breadcrumbs. Stir in all the caster sugar and the chocolate chips.
In a separate bowl mix the eggs , milk and vanilla extract together , then pour that mixture into the other bowl with everything else and mix.
Spoon it evenly into the muffin cases and bake for 15-20 minutes or until golden brown. cool in the tin for 10 minutes.
after 10 minutes of cooling in the tin , put the muffins onto a cooling rack or eat them now to have melted chocolate chips in the middle.
