Victoria Sponge
1. Heat the oven to 190 C. Flour and put greasing paper on 2, 20cm cake tins. Place the butter, sugar and vanilla extract into a bowl mix until it is creamy. Slowly beat in the eggs, one by one, then sift the flour in and mix.
2. Divide the mixture between the cake tins, evenly, then place into the oven and bake for about 20 mins until golden brown. The cakes should spring back when you gently push them in the middle. When ready, remove from the oven and allow to cool for 5 mins in the tin. Then take them out of the tin and place cakes on the cooling wrack. 3. Spread the jam onto one cake and put cream on the other cake. Put them together like a sandwich with the cream and jam in the middle. If you want spinkle the top with icing sugar. |
